I have prepared Stir fry vegetable rice for my little one as she is teething and love to munch the food so thought of preparing the dinner which is a bit crunchier for her to enjoy and healthier too as a complete meal.
Took the brown rice for her which I have soaked in hot water for 2-3 hours.
Brown Rice- 3 tbsp
Carrot- 2 tsp(diced)
Corn- 1 tsp
Broccoli- 2 florets
Homemade stock– 3 cups
In a pressure cooker took rice, spinach, corn and tomato. Cook them on a slow flame for 4-5 whistles or until cooked.
Steam Broccoli, snow peas, mushrooms and carrot.
In another pan take butter saute onion, add carrot, mushroom, broccoli and cooked rice to it. Mix well and add salt( optional) to it.
I have served this healthy vegetable rice with snow peas.
