Malpua

Malpua is a pancake served as a dessert or a snack.The batter for malpua differs from place to place, some like to add fruits to it whereas others just like to eat it is a traditional crispy snack.

Malpua Recipe

Ingredients

All purpose flour(Maida) – 1 cup
Khoya/Mawa- 100gms ( Recipe Khoya/Mawa )
Baking powder-a pinch
Fennel seeds(powdered)-1/2 tsp
Milk -1/2 cup (if you are using fresh khoya , you will require less milk)
Salt – a pinch

Sugar Syrup
Sugar- 1 cup
water-1/4 cup
Cardamom-3

Method
Prepare the sugar syrup add sugar, water and cardamom. Boil it till one string consistency.

Mix All purpose flour, mawa, baking powder, salt and fennel seeds, slowly add milk. Your batter should look like this pic, somewhat like dosa batter.Keep it for 15 minutes to settle.

I didn’t use much milk here as i have used the fresh homemade mawa but if you are using mawa from the store or market it is usually hard. So you may need more milk to soften it.

Some people like to add little sugar to this batter also but i am not adding it to batter as later we will be dipped them in a sugar syrup.

Traditionally malpua are fried in ghee but i have prepared them on a non-stick pan with little oil. Just cook malpua from both the sides.

Dip them in sugar syrup and enjoy !
