Pappa pomodoro( Italian Bread Soup)

Italian Bread Soup

I was searching for a healthy recipe using bread and saw quite a few different recipes. Slightly modified to suit my little one taste buds and came up with this one it taste great yet simple.

It is an italian recipe using bread, tomato and herbs as I am preparing for my little one so included variety of vegetables.

A complete one pot meal with bread and vegetables cooked with lovely flavours. It was a hit with my baby.

** 12 months onwards

Ingredients


Carrot-3 tsp diced
Zucchini- 3 tsp diced
Broccoli-2 florets
Garlic Cloves- 1/2 tsp minced
Tomato (2)- 1 cup diced
Chicken/Vegetable Stock – I have used my homemade vegetable stock for it ( 250ml )
Herbs – Fresh Coriander, basil or any dry herb
Grated Cheese
Full cream Milk- 1/4 cup
Stale Bread- 1 (1 or 2 days old)
Olive oil

Method


1. In a pan heat olive oil add garlic and saute for a minute. Add vegetables and cook for 5-6 minutes.

2. Now add diced tomato and cook for sometime adding herbs( basil or coriander).

3. Add the stock to it ( I had vegetable stock with me so that goes into the soup but if you have chicken stock you can take that too).

4. Remove the crust from bread and cut it into small cubes.

5. Add milk and let it simmer for 20 minutes

I have added milk here to soften the bread as i am preparing for my little one.It will enhance the flavour but if you are preparing for adults then it is optional.


6. In the end add bread cubes and let it blend with the soup.

Serve with drizzle of olive oil and grated cheese.




** We can make it as a complete family meal as well – add salt, pepper when serving to adults.


** if in case you don’t have any stale bread then cut it into cubes and put it into oven for 5-10 min.
