Why I am stressing on this healthy snack as my darling is a picky eater and it took me ages to let him have a new food as every time story ends with trying and the end.

Sometime back tried preparing Broccoli Cheese soup and this time want to prepare another combination with Broccoli though preparation wise almost similar with little modification.
I am in love with Broccoli and whyn’t with so many health benefits it is one of the best food.
Broccoli is usually there at home but this time i have an opened mushroom packet and had just 4-5 mushrooms left so thought of preparing Mushroom Broccoli soup.
We have recently started loving Zucchini and developed the taste for it once we grilled it. This time tried doing a stir fry Zucchini at home and this is probably easiest under 10 minutes recipe which can be cooked without any preparation and it tastes yummy (read healthy as well).
Zucchini- 1 (Sliced)
In a pan heat olive oil and add the sliced zucchini, saute it for 3-4 minutes as it will start leaving
Eggy Vegetable rice is another recipe which you can make your little one but adding veggies and egg to make it a complete meal.
With teething baby you just need to keep on trying as one day they will love the food and very next day don’t even open their mouth. My baby only loves to eat plain rice sometimes so thought why not just add few veggies and egg to make it a healthier option for her.
Boiled Rice- 3/4 bowl
Carrot- 3 tbsp cubed
Onion- 1/2 chopped
Zucchini- 2 tbsp cubed
**Veggies are slightly steamed
In a pan heat butter ,add onion and saute it. Add all the veggies, salt and cook for few minutes.
Add rice to it and cook for another few minutes.
In another pan make a soft omelette cut it into pieces and add it to rice.
Stir it well and serve.
Baked Pasta is another quick modified version of my regular pasta minus tomato, garlic, white or red sauce but it just tastes yummy somehow I manage to grab one spoon from the meal. Though she was unable to finish it but enjoyed.
Pasta – Handful
Carrot- 2 tbsp(Grated)
Zucchini- 2 tbsp(Grated)
Onion- 1 tbsp(chopped)
Milk- 1/4 cup
Butter- 1 tbsp
Cheese- 4 tbsp
Cook pasta in a boiling water until tender. Drain the water and transfer it to another bowl.
In a ovenproof bowl take grated carrot, zucchini and onion.
Add cooked pasta, butter and milk. Sprinkle little salt and white pepper.
Top it with grated cheese.
Bake it for 10-15 minutes as I want it to have some milk texture and not very dry for my toddler. ( Adjust according to your oven)
