Buckwheat spinach and potato pancake
Buckwheat spinach and potato pancake which we usually make during the festive time. Buckwheat has a perfect combination of starch, protein, fat and mineral. It is one of the best form of dietary fibre, those who are allergic to wheat and are on gluten free diet can enjoy this best food ever.

 

Ingredients
Boiled Potato- 1(mashed)
Spinach- handful ( chopped)
Buckwheat flour- 4 tbsp
Oil
Butter
salt(optional)
Method
Take mashed boiled potato, spinach chopped, salt and buckwheat flour. Mix all these well and add oil. Knead a dough and if you find it sticky or dry adjust accordingly ( if it is dry i usually add 1-2 tsp milk) to make dough and if it is sticky then add more flour to it.
In a pan take some butter/oil, make small balls from the dough and press lightly between your hands.
Cook from both the side well( it normally take more time than the usual pancake as buckwheat dough take slightly more time to cook). Do check  on both the sides that it is well cooked.
Since it was the first time i have served this to my toddler so just served alone. QUite happy to see that she enjoyed the healthy meal.
