Minestrone mini soup

Minestrone is a lovely hearty soup and really good for cold weather. Last week it was raining and the weather turned slightly cold for baby, so thought of preparing something warm soupy meal for her to enjoy on own.

 Though she can’t have all of this soup on her own even with all the mess around.

She loves to pick up pasta and vegetables from the soup. You can use any kind of pasta of your baby’s choice- animals, alphabets, stars. I have Heinz star pasta with me which goes well in this soup.

**Recipe – 12 months onwards

Ingredients
Onions- 1 small finely chopped
Garlic- 1 tbsp
Baby Carrot- 1 small diced
Baby corn- 1 cut into pieces
Tomato paste-4 tbsp
Tomato- 1 finely chopped
Baby pasta- handful
Vegetable stock/cubes– 10 cubes/ 2 cups
Olive oil or Butter – 1 sp

Method
1.You can take any vegetable of your choice but carrot, corn gives a nice texture.

2.Heat the butter/oil in a pan, add garlic and onion saute for a minute.

3.Add carrot, tomato, baby corn and saute over 5-6 minutes.Also, add pasta to it.

4.Since I have vegetable stock cubes with me, I have added the same to this soup.Took around 10 cubes for it or use 2 cups of water.Bring it to boil, cover and simmer for 20-25 minutes.

5.Lastly added a pinch of salt and little herb for the flavour.

6.It can be served along with toasted bread fingers as babies enjoy dipping them in the soup.

You can freeze the extra portions and use within 1 month. Heat properly before serving.

  2. I've always wanted to try making minestrone but have been admittedly intimated. Your recipe seems easy enough to follow though. Will try it one of these days!

  3. This doesn't look too difficult – I wonder if you have a recipe for homemade vegetable stock that will complete this recipe? Using cubes, while yummy, is just not as wholesome.
