Minestrone soup
Minestrone soup is one of the soups which you will enjoy any time of the day.
 My love for soups has started at The Soup Spoon, all the soups served are really yummy & filling with an unique flavor . I have first tried  this soup there,love the flavor and the variety of colours this soup has
in it.
Ingredients
Garlic- 3 cloves
Onion-1 large
Tomato-2 large
Tomato paste-4 tbsp
Carrot-1/2 cup (diced)
Peas-1/4 cup
Potato-1 medium(diced)
Lotus stem- 1/4 cup(optional) (diced)
Pasta- 1/4 cup
Chickpeas/ Kidney Beans- Handful( soaked and pressure cooked)
Salt-To taste
White /Black pepper-1/4 tsp
Olive oil- 1-2 tsp
Seasoning- Italian or herbs
1. Soak chickpeas or kidney beans for few hours and pressure
cook them

 

2. Chop garlic, onion, tomato and veggies finely

  3. In a big pan put oil ,add chopped garlic , onion and sauté
for few minutes till they becomes translucent.
4. Now add the chopped tomato to it and sauté till they turn
soft
5. Add the chopped veggies, pasta , cooked chickpeas/ kidney beans
and add 2-2 1/2 cups of water.
6. Add seasoning , pepper , salt , tomato paste and mix well
7.Cook on medium to low heat for 15 minutes or till veggies and
pasta is done
Your healthy and yummy soup is ready .
